One-pot and One-pan Meal Recipes featuring Pantry Staples

Sweet Potato and White Bean Chowder- you can swap the white beans for chickpeas or any other canned beans and the chicken stock can be swapped for any other broth.

Curried Potato and Chickpea Stew- you can use any potatoes and any combination of canned beans or peas or use all of one type.

Smashed Potatoes and Greens (like Irish colcannon)- you can swap the collards for kale, cabbage, chard, or even frozen spinach

Scrambled Eggs and Veggies- you can swap out the kale for other leafy green vegetables. Experiment with swapping out any of the vegetables for those that you have on hand.

Simple Shakshuka- you can swap out canned tomatoes (whole, chopped, or crushed) and leave out any vegetables or spices you don’t like or don’t have. Serve with bread, pita, or rice for a more complete meal. 

Southwestern Black Eyed Pea and Corn Salad- you can swap out the black eyed peas for any other canned beans and the canned corn can be swapped for frozen corn. Toss all ingredients into a bowl for a quick lunch.

Black Bean and Vegetable Soup- Swap any beans you have for the black beans, you can swap in whole canned tomatoes by crushing them yourself or use chopped tomatoes if you have these on hand. Leave out any vegetables or spices you do not have or do not like.

Make life easier by prepping your meals ahead of time!

Roasted Vegetable Pasta- you can swap out the vegetables for whatever vegetables you have on hand. Use any shape of pasta.

Pasta with Beans and Greens- you can swap out frozen vegetables and use whatever beans you have on hand

Canned Salmon Patties- you can swap the canned salmon for canned tuna or even canned chicken. Try these patties in a sandwich or alongside a salad to create a whole meal. 

Curried Chicken Salad- try this on a sandwich or enjoy it with crackers for a snack or easy lunch.

Stuffed Sweet Potatoes- you can use canned beans, frozen or canned corn and swap in any other vegetables you might like. Check out the microwave recipes for how to make a “baked” potato in the microwave.

Pantry Pasta- use any shaped pasta that you have, experiment with adding other vegetables or cheese

Tomato Soup- you don’t need to blend this soup, you can leave it chunky and rustic if you don’t have a blender. Consider serving with bread or grilled cheese for a more substantial meal.

Noodles with Peanut Butter Sauce- fresh or canned vegetables can be used in place of frozen vegetables, use any pasta you may have on hand. Experiment with adding protein like canned chicken or tuna, tofu, or a fried egg.
